AOP Rosé -Languedoc
Appellation area
The Coteaux du Languedoc appellation has been replaced by the Aoc Languedoc in May 2007 .It covers the mediterranean coastline from the spanish border up to Nimes , backed on the foothills of the Montagne Noire and the Cévennes . The variety of terroirs and the typicality of the Aoc Languedoc wines has led to a 3 tier organization - The regional appellation Languedoc, the sub-region appellations corresponding to the various soil and climate areas , the names of Terroirs in the heart of these sub-region appellations .
Geology
Very diverse : hard limestone on the scrubland , schists , gravels brought by rivers of the Languedoc ,etc .
Climate
Mediterranean climate on the whole appellation area : warm and dry season , with differences due to terrain .This diversity has allowed the definition of large soil and climate areas .
Grape varieties
Main grape varieties for the reds and rosés : Grenache N, Syrah and Mourvèdre (50 % minimum and 20% minimum syrah mourvèdre) beside Cinsault and Carignan ,
Vinification
Reds : traditional fermentation ( destalked ) or vinification with full grapes . Rosés : bleeding method - Whites - traditional , skin maceration ( oak ageing for some )
